If you’ve been to an event hosted by the Groton Interfaith Council, you know we have talented chefs among us who always bring delicious home-made treats. So we’ve decided to start sharing some of our tastiest recipes. Here’s one from a GIC member from the Groton Jewish community, she will be making her famous potato pancakes for Chanukah:
Latke Recipe
Makes 12 latkes
- 3 potatoes, peeled
- 4 Tablespoons grated onion (my ratio is one onion to every 3 potatoes)
- 1 teaspoon salt
- 2 eggs
- 2 Tablespoons flour
- Oil about 1/2 inch high in frying pan (add more as needed)
Put peeled potatoes in Cuisinart until mushy. Put potatoes in a strainer to get out the water. Chop onions finely with a knife or in Cuisinart. Mix onions with potatoes and eggs, flour and salt. Heat oil in pain. Place mixture in heated oil, making small pancakes. Cook on both sides until lightly brown. Remove and put latkes between paper towels to absorb the excess oil. Serve with applesauce or sour cream.
